Ingredients
- 1 cup organic all purpose flour
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- 2 tbsp coconut sugar
- 1 egg
- 1/3 cup pumpkin puree
- 2 tbsp maple syrup
- 1/3 cup butter softened (microwave for 30 sec)

Instructions
- Preheat oven to 350F
- In a bowl, combine the flour, spices, baking soda and coconut sugar
- In another bowl, combine the pumpkin puree, maple syrup and butter. Add in the egg and stir just until mixed
- Add dry ingredients to the wet and mix
- Scoop onto parchment paper lined on a baking sheet
- Flatten slightly using rubber spatula
- Bake for 14-16 minutes
- Let cool and enjoy! 🙂
