- 1 egg
- 1/3 cup coconut oil melted
- 1 tsp vanilla
- 1 tbsp maple syrup
- 1/2 cup coconut sugar
- 3/4 cup ap flour
- 1 1/3 cup oats
- 1/2 tsp baking soda
- 1 tsp cinnamon

Instructions
- Preheat oven to 350F
- Mix the egg, coconut oil, vanilla, maple syrup and coconut sugar in a bowl.
- In another bowl, mix together the flour, oats, baking soda and cinnamon and add to the wet mixture.
- Stir until fully combined.
- Fold in 1/2 cup mini dark chocolate chips.
- Scoop onto a lined baking sheet
- Bake for 10-12 min
