Preheat oven to 350F
Mix together 1 egg + 1/2 cup org cane sugar + 1/2 cup melted coconut oil + 2 tsp vanilla + 3/4 cup unsweetened almond milk. Add in 2 cups all purpose flour + 1 1/2 tsp baking powder + 1 tsp cinnamon and stir until fully combined.
Evenly add batter to oiled pan (I did mini loaves but you could add to cake pan or muffin pan).
Streusel: 1/3 cup org cane sugar + 1/3 cup flour + 3 tsp cinnamon + 1/4 cup melted coconut oil (can double if you prefer thicker layer)
Crumble on top of each loaf
Bake for 23-25 min or until toothpick comes out clean!
{can sub butter or ghee for the coconut oil and reg milk for the almond milk}
