in a bowl, mix together 1/4 cup melted coconut oil + 1/4 cup plain greek yogurt + 2/3 cup almond milk + 2 egg whites + 1 tsp vanilla + 1/2 cup org cane sugar
mix in 2 cups all purpose flour + 2 tsp baking powder
fold in 1 1/2 cups blueberries
pour batter into an oiled/lined bread pan
bake at 350F for 55 min or until toothpick comes out clean
