1/2 cup coconut oil (melted & cooled)
2/3 cup org cane sugar (can add 1/4 cup more if you prefer sweeter)
1 tsp vanilla
2 eggs (room temp)
1 2/3 cup oat flour flour (can sub all purpose)
1 tsp baking powder
1/2 tsp baking soda
1 cup shredded zucchini (squeezed & drained to take out excess liquid)
1/2 cup dark mini chocolate chips

mix together the coconut oil + sugar + vanilla
whisk in eggs just until combined
in a small bowl, mix together the flour + baking powder & soda and add to wet mixture
stir until thoroughly mixed
gently fold in the zucchini and chocolate chips
add batter to a pan (I made mini loaves but you can pour into a normal loaf pan)
bake at 350F for 40 min (mini) or 55-60 min (large) or until toothpick comes out clean
let cool and enjoy!
