1 egg
1/3 cup plain greek yogurt (or apple)
1/3 cup org cane sugar/coconut sugar
1/3 cup maple syrup
1/2 cup almond milk/milk of choice
1/3 cup coconut oil, melted and cooled
1 3/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
Cinnamon sugar mixture: 1/4 cup org cane sugar (or coconut sugar) + 1/2 tbsp cinnamon. Add more cinnamon if you prefer!

Preheat oven to 350F
Mix together the egg, sugar, maple syrup, yogurt, almond milk and coconut oil.
In another bowl mix the flour, baking soda and baking powder.
Add to the wet mixture and stir until fully combined.
Fold in 1 cut up apple
Add 1/3 batter to a lined/oiled pan and sprinkle 1/3 of the cinnamon sugar evenly on top. Repeat 2 more times.
Bake for 50 min or until toothpick comes out clean! Oven times vary, may take longer.
