1 egg
1/3 cup plain greek yogurt
1 shot espresso or 1/4 cup coffee, cooled (save 1 tbsp for the glaze)
1/3 cup maple syrup
1/3 cup coconut oil or butter softened
1 2/3 cup all purpose flour or oat flour
1 tsp baking soda
1/2 tsp baking powder

Preheat oven to 350F
Stir together the yogurt + espresso/coffee + maple syrup + oil/butter
Mix in the egg
Add in the flour + baking soda and powder
Scoop half the batter into a lined bread pan, sprinkle cinnamon sugar on top, add the rest of the batter and sprinkle with more cinnamon sugar
Bake for 55-60 min or until toothpick comes out clean
Glaze: 1 cup powdered sugar + the saved espresso/coffee (top when loaf has cooled)
