Dough:
in a bowl mix 1 1/4 cup all purpose flour + 1 tsp cinnamon + 1/2 tsp baking powder
cut in 1/2 cup softened butter until crumbly
add in 3 tbsp cold water and mix until dough forms
place on a floured surface and roll out
cut rectangles (size really doesn’t matter)
keep rolling and cutting until all dough is used
lay on a lined baking sheet
Filling:
1/4 cup pumpkin purée + 1/4 cup brown sugar + 1 egg white
Evenly spread filling on half the rectangle pieces leaving a small border
Place the other rectangle on top and press down with fingers along edge then using a fork press down again
Poke holes on top
Bake at 400F for 23-25 min or until golden
Icing: 1 cup powdered sugar + 1 tbsp maple syrup + 1 tbsp milk of choice
