preheat oven to 375F
in a large bowl, mix together 1/2 cup softened butter + 1/2 cup brown sugar + 1/2 cup granulated sugar + 1 tsp vanilla
mix in 1 cup pumpkin purée + 1/4 cup milk of choice
whisk in 2 eggs
add in 1 2/3 cup all purpose flour + 1 tsp baking powder + 1/2 tsp baking soda + 2 tsp pumpkin pie spice
scoop evenly in a lined/oiled muffin pan (12 total)
cream cheese swirl: mix together 4 oz softened cream cheese + 1 egg yolk + 1 tsp vanilla + 3 tbsp granulated sugar
swirl on top of each muffin
bake for 27-30 min or until golden and toothpick comes out clean
