preheat oven to 375F
cream together 1/2 cup softened butter + 1/2 cup granulated sugar + 2 tbsp powdered sugar + 1 tsp vanilla
add in 2 cups all purpose flour and stir until ball of dough forms
flatten on a lightly floured surface
using a circular cutout (I used the top of a mason jar) cut out circles
keep flattening and cutting until all dough is used up
place on a lined baking sheet
bake for 15-20 min or until golden
let cool for at least 30 min
melt 1 bar dark chocolate + 1 tbsp coconut oil
dip cookie bottom first then drizzle on top
put in freezer for about 30 min
