in a stand mixer, add in 1 1/4 cup warm water + 1 packet active dry yeast + 1 tbsp granulated sugar + 2 tbsp melted butter
whisk until bubbles form
add in 3 1/2 cups bread flour (more as needed)
knead on level 2 until dough forms
if too sticky add in more flour 1 tbsp at a time
cover with towel and let rise for 30-60 min
prepare baking soda bath: bring 5 cups water to a boil and mix in 1/4 cup baking soda
place dough on a floured surface and cut into 6-8 pieces
roll into a rope and cut into small pieces (as even as you can but does not have to be perfect)
place a few pieces at a time in bubbling water for 15 seconds and place on a lined baking sheet
continue to do this until all pieces have been in water
bake for 15-17 min or until golden in color
top with salt and enjoy with your favorite melted cheese!
