cream together 1/2 cup softened butter + 1/2 cup granulated sugar + 1 tsp vanilla + 1 tbsp powdered sugar
mix in zest from 1 lemon + juice from 1/2 a lemon (save the other half for the icing)
whisk in 1 egg just until combined
stir in 1 1/2 cup all purpose flour + 1 tsp baking powder
*if dough feels sticky add flour 1 tbsp at a time
form dough into a ball and wrap in plastic wrap, place in fridge for 1 hour
roll out dough using a rolling pin and cut out using cookie cutters (makes 20 total)
place on lined baking sheet and place in fridge while oven preheats to 350F
bake for 10-12 min or until golden
icing: microwave 6 raspberries, mash and strain to get a few pink drops + juice from 1/2 a lemon + 1 cup powdered sugar
