preheat oven to 350F
cream together 1 cup softened butter + 1/2 cup granulated sugar + 1 tsp vanilla
add in 2 cups all purpose flour (spooned & leveled) and stir until combined
press 2/3 of the dough evenly in a lined 9×9 baking dish
bake for 10 min
peel & cut 3 peaches into small pieces
on top of the shortbread layer, add 1/2 cup peach jam and spread evenly (I got a jar at farmers market)
add the peaches on top
crumble remaining shortbread on top
bake for 30 min or until golden
cut into bars once cooled
