preheat oven to 375F
in a heated oiled pan, add 1 cup blueberries and mash when able. add 2 tbsp chia seeds and let it thicken off a burner
mix together 1/2 cup softened butter + 1 tsp vanilla + 2 tbsp brown sugar + 1/4 cup granulated sugar + zest from 1/2 a lemon + 1 tbsp lemon juice
whisk in 1 egg yolk
add in 1 cup + 2 tbsp all purpose flour + 1 tsp baking powder
scoop on a lined baking sheet
roll into a ball and toss in a little sugar (optional)
press down with palm and then using a tsp measuring tool slightly press down each center
bake for 7 min
add chia seed jam evenly and bake for another 5 min
let cool and enjoy!
