preheat oven to 400F
make crust:
in a bowl, mix together 1 cup crushed graham crackers (about 9 total crackers) + 4 tbsp melted butter + 3 tbsp brown sugar
press down into a lined 8×8 pan and bake for 12 min
change oven temp to 330F
make cheesecake filling:
add 2 softened packages of cream cheese (16 oz total) + 2 tsp vanilla + 3/4 cup granulated sugar + 1/4 cup plain greek yogurt + 3 eggs
using a handheld mixer or a stand mixer, whisk together (do not over mix)
pour on baked crust and place back in oven for 45-50 min or until edges are golden
let cool for 3+ hours before taking out of pan and slicing
place in closed container in fridge for up to a week
