Ingredients
1 1/2 c GF flour
1 tsp baking soda
2 tsp cinnamon
1/4 tsp salt
1 c grated carrots
1/2 c maple syrup
1 tsp vanilla
1 egg
1/3 c melted coconut oil
1/2 c nut milk
1/2 tsp acv
Instructions
Mix wet to dry. Fold in 1/3 c raisins or nuts. Pour batter into muffin pan. Bake at 350F for 20 min or until toothpick comes out clean.
Glaze: powdered sugar, almond milk and maple syrup until desired consistency
