Ingredients
1/2 c diced yellow onion
14.5 oz can diced tomatoes
15 oz can garbanzo beans (rinsed and peeled)
1 c bone broth
2 tbsp tomato paste
1 tsp coriander
1/4 tsp cinnamon
1/2 tsp turmeric
1 tsp acv
1/2 tbsp maple syrup
Instructions
Saute onion in 1 tbsp avocado oil and garlic over medium heat until translucent. Add everything but the tomato paste and stir. After about 3 minutes, lower heat and add tomato paste. Let it simmer until it thickens. Serve with quinoa, couscous or brown rice.
