Ingredients
1 3/4 c almond flour
1 tsp baking powder
3 tbsp coconut sugar
1 egg
1 tsp vanilla
2 tbsp coconut oil, melted
3 tbsp coffee, cooled*
Mini chocolate chips
Instructions
Preheat oven to 350F
Combine flour, baking powder and coconut sugar in a bowl and mix
Whisk egg, vanilla coconut oil and coffee in another bowl
Mix wet to dry
Fold in chocolate chips
Scoop onto parchment paper on a baking sheet
Press down on each cookie
Bake for 14 min. Leaving cookies on middle rack, broil on high for 1 min watching carefully so the cookies do not burn
Makes 14 cookies

*After I had my cup of coffee, I refrigerated the rest overnight and is what I used in this recipe
Store in airtight container in fridge for up to 1 week
Omit broiling step if you prefer your cookies soft and chewy
