grate 2 large apples and press down with paper towel to soak up as much liquid as you can
add to an oiled pan over low heat (I used coconut oil) + 1 tbsp butter + 1 tbsp brown sugar + 1 tsp cinnamon and cook for about 10 min
set aside in a plate or bowl to cool
preheat oven to 350F
mix together 1/2 cup softened butter + 2 tbsp granulated sugar + 1/2 cup brown sugar + 1 tsp vanilla
whisk in 1 egg just until combined
add in 1 cup all purpose flour (scooped & leveled) + 1 tsp baking powder + 1 tsp cinnamon
press down 1/2 the batter into a lined 8×8 dish
spread apples on top evenly and add the rest of the batter on top of apples
bake for 25-30 min or until golden
maple glaze: 1 cup powdered sugar + 1 tbsp maple syrup + 1-2 tbsp milk of choice
