Ingredients
2 c almond flour
2 tsp baking soda
1 tbsp cinnamon
3/4 c oats
2 eggs
4 tbsp coconut oil, melted
1/3 c honey
1 tsp vanilla
1/2 c unsweetened applesauce
Streusel:
2 tbsp coconut oil, melted
2 tbsp almond flour
2 tbsp coconut sugar
1 tsp cinnamon
Instructions
Preheat oven to 350F
In a bowl, combine the flour, baking soda, cinnamon and oats
In another bowl, combine the eggs, coconut oil, honey and vanilla
Mix the wet ingredients into the dry
Add the applesauce and stir, making sure not to overmix
Scoop/pour the batter into a muffin pan (either lined or oiled)
Mix the streusel ingredients together and crumble on top of each muffin
Bake for 22-24 min or until toothpick comes out clean
