2 eggs
3/4 cup yogurt (I like to use greek)
1/3 cup coconut oil, melted (or butter)
1/2 cup milk of choice
1 tsp vanilla
2 1/2 cups organic all purpose flour
2 tsp baking powder
2/3 cup org cane sugar
1 cup mini dark chocolate chips .

Preheat oven to 425F
In a bowl, mix together the eggs, yogurt, vanilla, oil and milk. In another bowl, mix together the flour, baking powder and sugar.
Add dry flour mixture to the wet mixture and stir together until fully combined.
Fold in chocolate chips.
Line a muffin pan with liners & spray lightly with coconut oil
Scoop batter into pan (fill all the way to the top) and sprinkle with cane sugar
Bake for 5 min and lower temp to 350F then bake for 20 minutes or until toothpick comes out clean
