1 cup mashed ripe bananas (about 3)
2 eggs
1/4 cup almond milk
1 tsp vanilla
1/2 cup oil of choice (coconut, applesauce, avocado, butter/ghee), softened
2/3 cup coconut sugar (can sub brown sugar or reg sugar)
2 cups pancake mix
1 tsp baking soda

Preheat oven to 350F
Cream oil + coconut sugar in a bowl.
Add eggs, vanilla and milk and mix well.
Mash in bananas
In another bowl, mix together pancake mix and baking soda and add to wet ingredients
Stir until fully combined
Pour into oiled/lined bread, pour a little maple syrup on top and bake for 50-55 min or until toothpick comes out clean
