- microwave 1/2 cup (1 stick) butter for 30 seconds
- pour into a mixing bowl and cream with 3/4 cup granulated sugar + 2 tsp vanilla
- measure out 1/2 cup milk of choice, microwave for 15 sec then squeeze in 1/2 a lemon and stir into sugar mixture
- whisk in 2 eggs just until combined
- add in 1 1/2 cup all purpose flour (spoon & level) + 1 1/2 tsp baking powder + 1/2 tsp baking soda
- fold in 1 cup blueberries (can sub chocolate chips or any fruit)
- scoop evenly into a lined & oiled muffin pan
- sprinkle a little bit of sugar on top
- bake at 425F for 5 min, lower temp to 350F and bake for another 20 min or until toothpick comes out clean
