preheat oven to 350F
mix together 1/2 cup softened butter + 2 tsp vanilla + 1/2 cup granulated sugar + 1 3/4 cup all purpose flour
press down 2/3 of the shortbread into a lined 8×8 pan (save the rest for the crumble on top)
heat 1 cup blueberries in an oiled pan over low-medium heat (I used coconut oil)
mash down when able and let it simmer for 5 min
let cool and add evenly on top of shortbread layer + a few more blueberries
crumble remaining shortbread on top of blueberry layer
bake for 30-35 min or until golden
cut into bars & enjoy!
