preheat oven to 350F
cream together 1 cup softened butter + 1/2 cup granulated sugar + 1 tsp vanilla
add in 2 cups all purpose flour (spooned & leveled) and stir until combined
press 2/3 of the dough evenly in a lined 9×9 baking dish
bake for 10 min
peel 1 apple and chop into small pieces
warm over low heat in coconut oil until soft
sprinkle a little cinnamon and mix
microwave 1 cup caramel chips + 1/2 tbsp coconut oil until melted and pour evenly on top of shortbread
add the apples on top
crumble remaining shortbread on top
bake for 30 min or until golden
cut into bars once cooled
