Ingredients
1 c almonds (coarsely chopped)
1/4 c chia seeds
1 c GF oats
1/2 c unsweetened coconut flakes
1 tsp vanilla
1/3 c honey
1/4 c coconut oil, melted
1 tbsp flaxseed meal
Instructions
Preheat oven to 350F and prepare baking sheet with parchment paper
Combine almonds, chia seeds, oats, coconut flakes and flaxseed meal into a bowl
Stir together the vanilla, honey and coconut oil and pour over the dry ingredients.
Mix well
Flatten onto parchment paper, making sure it is tightly packed
Bake for 20 min and let cool completely, about 1 hour, before breaking apart with your hands
Recipe Notes
Store in airtight container in fridge for up to 1 week
Substitute other nuts for the almonds, maple syrup for the honey or add in any other ingredients you have on hand (as long as the amounts are kept the same)
