1 cup mashed ripe bananas (about 3)
2 eggs
1/4 cup almond milk
1 tsp vanilla
1/2 cup oil of choice (coconut, applesauce, avocado, butter/ghee), melted/softened
2/3 cup coconut sugar (can sub brown sugar or reg sugar)
2 cups gluten free all purpose flour/reg AP flour
1 tsp baking soda

Preheat oven to 350F
Cream oil + coconut sugar in a bowl. Add eggs, vanilla and milk and mix well.
Mash in bananas
In another bowl, mix together flour and baking soda and add to wet ingredients
Stir until fully combined
Pour into oiled/lined bread pan (I did about 1/3 of the batter, sprinkled cinnamon sugar and repeated until the top). Bake for 50-55 min or until toothpick comes out clean
