1 egg
1 tsp vanilla
1 tbsp orange zest
1/2 cup plain greek yogurt
1/4 cup melted coconut oil
3 tbsp orange juice
1/3 cup organic cane sugar
1/3 cup coconut sugar
1 1/2 cup all purpose flour
1 tsp baking powder
1 tsp cinnamon

Preheat oven to 350F
Mix together the egg, vanilla, orange zest, yogurt, coconut oil, orange juice and sugars.
In another bowl, mix together the flour, baking powder and cinnamon.
Add to the wet mixture and stir well. Fold in 1-1 1/2 cups whole cranberries.
Add batter evenly into a lined/oiled muffin pan and bake for 23-25 min (toothpick should come out clean)
Optional: top with orange glaze (1/3 cup powdered sugar + 1 tbsp orange juice)
