mix together 1/2 cup softened butter/coconut oil + 1 tsp vanilla + 1/3 cup org cane sugar + 1/3 cup dark brown sugar/coconut sugar + 1 cooled shot of espresso + 1 egg
add in 2 cups all purpose flour + 1 tsp baking powder and stir until fully combined
add in 3/4 cup mini dark chocolate chips
scoop onto a lined baking sheet and bake at 350F for 14 min
