in a pan over low heat, brown 1/2 cup (1 stick) butter (about 5 min stirring occasionally)
pour into a large mixing bowl and add in 1/2 cup dark brown sugar + 1/4 cup granulated sugar + 1 tsp vanilla
pour in 2 tbsp cooled espresso
whisk in 1 egg
add in 1 1/2 cup all purpose flour + 1/2 tsp baking soda
fold in 1 cup dark chocolate chips
scoop and roll on a baking sheet (24 total— I used 2 sheets)
bake at 375F for 7-9 min or until golden
