- 1/4 cup melted coconut oil + 1/4 cup maple syrup + juice from 1/2 a lemon + 1 egg.
- mix in 2 cups almond flour + 1 tsp baking powder.
- fold in 3/4 cup frozen blueberries.
- scoop, roll and slightly flatten onto a lined baking sheet
- bake at 350F for 12-14 min and broil on low for 1 min to make the tops golden!
optional: mix in 1/2 tsp almond extract into wet ingredients
