preheat oven to 425F
cream together 1/2 cup softened butter + 2/3 cup granulated sugar + 1 tsp vanilla + zest from 1 lemon (about 2 tbsp) + 1 tbsp lemon juice
mix in 1/4 cup plain greek yogurt + 1/4 cup milk of choice
whisk in 1 egg + 1 egg white
add in 1 1/2 cup all purpose flour + 1 tsp baking powder + 1/2 tsp baking soda and stir until combined
fold in 1 cup blueberries
scoop into oiled/lined muffin pan (9 muffins)
streusel: 1/4 cup softened butter + 1/2 cup flour + 1/2 cup granulated sugar (crumble over each muffin evenly)
bake for 5 min then lower temp to 350F and bake for another 23-25 min or until toothpick comes out clean
