2 cups oat flour (or AP flour)
2 tsp baking powder
1/2 cup organic cane sugar
1 tbsp poppyseeds (optional)
1/2 cup coconut oil (or butter)
1/2 cup almond milk
juice from 1/2 a lemon
2 tsp vanilla
1 egg
1 tbsp lemon zest

preheat oven to 400F
add oat flour, baking powder, poppyseeds and sugar to a bowl
in another bowl, mix the coconut oil, almond milk, vanilla, lemon zest, lemon juice and egg
add to the dry ingredients
take the dough and place on a floured surface and knead into a ball (add a little flour at a time until not sticky)
flatten into a circle and cut into 8 pieces
place on a lined baking sheet and bake for 25 min
lemon glaze is lemon juice + powdered sugar
