preheat oven to 375F
mix together 6 tbsp softened butter + 1/2 cup brown sugar + 1/3 cup granulated sugar + 1 tsp vanilla
add in 3/4 cup canned pumpkin purée
whisk in 1 egg just until combined
add in 1 1/3 cup all purpose flour + 1/2 tsp baking soda and stir all together
scoop on a lined baking sheet (9 total cookies)
bake for 12-14 min or until toothpick comes out clean
icing: 1 cup powdered sugar + 1 tbsp milk of choice + 1 tbsp maple syrup (I poked holes in the cookie with a toothpick so it would absorb the icing more!)
