caramel poke cake💫

a simple but so so delicious holiday cake recipe you need to make!🎄

recipe—
cake:
preheat oven to 350F
mix together 1 cup (2 sticks) softened butter + 1 cup granulated sugar + 1/2 cup dark brown sugar + 1 tbsp vanilla
stir in 1 cup buttermilk (room temp)
whisk in 2 eggs
in another bowl, mix together 2 1/2 cup all purpose flour + 2 tsp baking powder
add to wet ingredients and stir just until combined
pour into oiled bundt pan and bake for 45 min or until golden and toothpick comes out clean

caramel:
melt 1/2 cup butter in a small sauce pan and add in 1/2 cup dark brown sugar
keep stirring over low heat until it thickens
whisk in 2 tbsp milk
remove from burner and allow to cool

poke holes all over cooled cake and pour caramel sauce on top

slice and enjoy!

there’s 2 weeks until thanksgiving!!🤎 so heres 2 fun recipes you can make to bring for dessert using a box of puff pastry that are simple & yummy!

pumpkin pie puff pastries—

preheat oven to 400F
unthaw 1 sheet puff pastry according to instructions
place on a lightly floured surface and cut into 12 even pieces
flatten slightly and press into an oiled muffin pan (I used silicone so they could pop out easily!)
pumpkin pie mixture: 1 cup pumpkin purée + 1/4 cup brown sugar + 1 tsp pumpkin pie spice
add a spoonful into each puff pastry crust
bake for 20-25 min or until golden and crisp
top with your favorite whipped cream!

apple pie bars—

thaw 1 sheet puff pastry according to package instructions
on a lightly floured surface, flatten just a little with a roller
using a pizza cutter, cut into 16 rectangles and place on a lined baking sheet
score around the border
apples: cut 2 apples thinly, mix with 1 tbsp granulated sugar + 1/2 tbsp arrowroot flour + 1 tsp cinnamon
spread a small amount of apple butter on pastry square
place 2-3 slices on top of each puff pastry rectangle
bake at 400F for 23-25 min or until golden
drizzle with icing (1/2 cup powdered sugar + 1 tbsp milk of choice)

recipe—
dough:
microwave 3/4 cup milk of choice for 45 seconds
pour into stand mixer bowl
sprinkle 1 packet active dry yeast and whisk until bubbles form
add in 1/4 cup melted butter + 1/4 cup granulated sugar
whisk in 2 eggs
add in 3 cups all purpose or bread flour and using stand mixer, knead on level 2 until dough forms
place dough in a lightly oiled bowl and cover with warm towel
let rise for 1-2 hours or until doubled in size

rolls:
place dough on floured surface and roll out into large rectangle (about 8x14”)
brush 1/4 cup melted butter evenly
sprinkle 1/3 cup brown sugar + 2 tbsp cinnamon on top
cut into 12 even strips and roll into a roll
place in lined 9x13 dish
cover with warm towel and allow to rise while oven preheats to 350F
pour 1/3 cup half & half or heavy cream beneath rolls
bake for 23-25 min or until golden

icing: 1 1/2 cup powdered sugar + 1 tbsp milk of choice + 4 oz cream cheese softened + 2 tbsp melted butter (add more powdered sugar if you want it to be thicker)
