Ingredients
1 1/2 c almond flour
1 tsp baking powder
1 tsp cinnamon
1 egg
1/3 c yogurt (I used coconut milk yogurt)
2 tbsp coconut oil, melted
1/2 tsp vanilla
1 tbsp honey
Instructions
Preheat oven to 325F
Spray coconut oil on muffin pan
Combine the flour, baking powder and cinnamon in a bowl
In another bowl, whisk the egg. Add the yogurt, coconut oil, vanilla and honey and mix.
Pour wet ingredients to the dry and stir until fully combined
Scoop into muffin pan
Bake at 325 for 15 min or until toothpick comes out clean
*makes 12 mini muffins– double ingredient list to fill entire pan
