microwave 1 stick of salted butter (1/2 cup) for 30 sec and stir it until it’s fully creamy
add to a mixing bowl. mix in 1/2 cup organic cane sugar + 1/4 cup dark brown sugar/coconut sugar + 1 tsp vanilla. whisk in 1 egg until just combined.
divide in half into 2 bowls (~1/2 cup)
measure out 3/4 cup AP flour + 1/2 tsp baking soda and add to one bowl. fold in 1/2 cup mini dark chocolate chips.
measure out 2/3 cup AP flour + 1/2 tsp baking soda + 2 tbsp cacao powder and mix into the other bowl
scoop and press down cookie dough into an oiled mini muffin pan and keep alternating with the other dough
bake at 350F for 12-14 min
