1 egg
1/3 cup plain greek yogurt
1/3 cup org cane sugar/coconut sugar
1/3 cup maple syrup
1/2 cup almond milk/milk of choice
1/3 cup coconut oil, melted
1 3/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder

Preheat oven to 350F
Mix together the egg, sugar, maple syrup, yogurt, almond milk and coconut oil.
In another bowl mix the flour, baking soda and baking powder. Add to the wet mixture and stir until fully combined.
Scoop into a lined/oiled mini muffin pan and top with a cinnamon sugar mixture
Bake at 350F for 17-20 min or until toothpick comes out clean
