preheat oven to 400F
unthaw 1 sheet puff pastry according to instructions
place on a lightly floured surface and cut into 12 even pieces
flatten slightly and press into an oiled muffin pan (I used silicone so they could pop out easily!)
pumpkin pie mixture: 1 cup pumpkin purée + 1/4 cup brown sugar + 1 tsp pumpkin pie spice
add a spoonful into each puff pastry crust
bake for 20-25 min or until golden and crisp
top with your favorite whipped cream!
