1 1/4 cup all purpose flour
1/2 tsp baking soda
1/2 cup salted grass fed butter (softened)
1/4 cup organic cane sugar
1/2 cup coconut sugar (can sub brown sugar)
1 egg
1 cup peanut butter .
Preheat oven to 350F
In a bowl, microwave the butter for 30 sec to soften it
Add the sugars and cream together. Add in the egg and mix just until combined. Stir in the peanut butter and set aside
In another bowl, mix together the flour and baking soda
Add the flour mixture to the wet mixture and mix until fully combined
Refrigerate for 30 min (dishes time)! Scoop and roll onto baking sheet lined with parchment paper (makes 18)
Using your thumb or tablespoon make a small indent in the middle
Bake for 10 minutes
As soon as you remove from oven, make another indent using a tablespoon
Melt 1 dark chocolate bar + 1 tbsp coconut oil and add to middle of each cookie
