Mix together 1/2 cup (melted & cooled) coconut oil (or butter) + 1/2 cup peanut butter + 1 tsp vanilla + 1/3 cup org cane sugar + 1/3 cup dark brown sugar + 1 egg.
Add in 1 1/4 cup all purpose flour + 1/2 tsp baking soda and stir until fully combined.
Scoop into small balls and place on a lined baking sheet. Mash down making a criss-cross pattern with a fork.
Bake at 350F for 10 min
While baking, make the filling: 1/3 cup peanut butter + 1/2 cup powdered sugar + 1/4 cup milk
