add 2 1/2 cups oat flour (or all purpose) to a bowl, stir in 2 tsp baking powder + 1 tsp pumpkin pie spice + 1/2 cup org cane sugar.
cut up 1/2 cup butter or grate it into the flour mixture and using a pastry cutter combine it evenly throughout
measure out 1/3 cup milk of choice and whisk in 1 egg + 1 tsp vanilla + 1/4 cup pumpkin purée
add to flour mixture and mix just until it forms a ball of dough
place on a floured surface and cut evenly into 4 parts. *use more flour as needed if too sticky, just sprinkle until it no longer sticks to your hands!*
flatten into a circle and cut into 4 triangles (makes 16 mini scones)
place on lined baking sheet and bake at 400F for 23-25 min or until golden
maple syrup glaze: mix maple syrup + powdered sugar to desired consistency
