preheat oven to 400F
in a bowl, mix together 1/2 cup pumpkin purée + 1/4 cup milk of choice + 1 tsp vanilla + 1 egg
in another bowl, add in 2 cups all purpose flour + 2 tsp baking powder + 1 tsp pumpkin pie spice + 1/3 cup brown sugar
cut in or grate 1/2 cup butter and stir together until ‘crumbly’ texture
sprinkle flour over counter or adage piece of parchment paper and place dough on top
knead dough, adding a little flour, until no longer sticky and into a ball
press down until about 1 inch thick
cut into 8 even pieces
place on a lined baking sheet and bake for 17-20 min or until golden
icing: 1 1/2 cup powdered sugar + 1 tbsp maple syrup + 1 tbsp milk of choice + 1/2 tsp pumpkin pie spice
