soften 1/2 cup butter or coconut oil
pour into a mixing bowl and add in 1/2 cup org cane sugar + 1/4 cup coconut sugar + 1 tsp vanilla + 1/4 cup pumpkin purée
whisk in 1 egg
mix in 1 2/3 cup oat flour + 1 tsp baking powder
fold in 3/4 cup mini white chocolate chips
scoop on a lined cookie sheet
bake at 400F for 3 min, lower temp to 350F and bake for another 9-11 min
