Almond Shortbread Cookies

Ingredients
  • 1cup grass fed butter
  • 2 1/4cup organic all purpose flour
  • 1/2cup organic cane sugar
  • 1tsp vanilla
  • 1tsp almond extract
Instructions
  1. Preheat oven to 325F
  2. Microwave butter for 30 seconds to soften
  3. Pour in sugar, vanilla and almond and cream together
  4. Add in flour (1/2 cup at a time watching for crumbles) and mix well
  5. Refrigerate dough for 30 minutes
  6. To make shapes: roll out on parchment paper or floured surface and cut out using favorite cookie cutters. Transfer to parchment lined baking sheet. Refrigerate for 15 minutes prior to baking
  7. Or can roll into balls and press down slightly with palm
  8. Bake for 15-17 minutes or until edges are golden brown
  9. Let cool and enjoy!
Recipe Notes

Optional: dip in mixture of melted dark chocolate and coconut oil and top with festive sprinkles!
