Ingredients
- 3/4 cup white whole wheat flour
- 1/4 cup coconut sugar
- 1 cup GF oats
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1 egg
- 1/3 cup coconut oil melted and cooled
- 2 tbsp honey
- 3/4 cup apple peeled and diced into small pieces

Instructions
- Preheat oven to 350F
- In a bowl, mix the flour, oats, coconut sugar, cinnamon and baking soda
- In another bowl, whisk together the egg and honey, add in the coconut oil and mix well
- Pour the wet ingredients into the dry and stir until full combined
- Fold in the apples
- Scoop onto a baking sheet lined with parchment paper
- Flatten using a rubber spatula
- Bake for 14-16 minutes
