Blueberry Scone Cookies
Ingredients
  • 1 1/2cups almond flour
  • 3tbsp coconut flour
  • 1 egg
  • 1/4cup buttercan sub coconut oil
  • 1/4cup maple syrup
  • 1/2tsp almond extractcan sub vanilla
  • 1/2cup blueberries
Instructions
  1. Preheat oven to 350F
  2. Mix wet ingredients into dry ingredients and combine well
  3. Fold in blueberries
  4. Scoop, roll and flatten slightly onto a baking sheet lined with parchment paper
  5. Optional: sprinkle tops lightly with sugar
  6. Bake for 16 min and broil on low for 1 min
  7. Let cool and enjoy!
