Healthy Breakfast Blueberry Muffins
A healthy sweet muffin to add to your morning cup of coffee/tea! Fluffy, delicious and incredibly easy to whip up!

Ingredients
  • 1 1/2cup whole wheat flour
  • 1tsp baking soda
  • 1/4tsp salt
  • 1/3cup coconut sugar
  • 1/2cup unsweetened applesauce
  • 2tbsp maple syrup
  • 1 egg + egg white
  • 1/3cup oat milkor any non dairy milk
  • 1pint organic blueberries*
Instructions
  1. Preheat oven to 375F
  2. In a bowl, combine the flour, baking soda and salt
  3. In a large bowl, mix together the coconut sugar, applesauce, maple syrup, eggs and milk
  4. Add the flour mixture to the wet and mix until fully combined
  5. Fold in blueberries
  6. Scoop the batter evenly among the lined muffin pan**
  7. Bake for 22 minutes
  8. Let cool and enjoy! 🙂
Recipe Notes

*Add 1/2 tbsp flour to the blueberries prior to adding to the batter so they don’t sink while baking

**Lightly spray muffin liners with coconut oil to prevent batter from sticking too much to paper

Store in airtight container room temp for up to 4 days, in refrigerator for up to a week
