Butterscotch Oatmeal Chocolate Chip Cookies
Ingredients
  • 1cup + 2 tbsp cassava flourcan sub all purpose flour
  • 1/3cup GF oats
  • 1/2tsp baking soda
  • 1/4tsp salt
  • 1/2cup unsalted buttersoftened
  • 1/3cup organic cane sugar
  • 1/4cup coconut sugarcan sub brown sugar
  • 1 egg
  • 1/3cup butterscotch chips
  • 1/3cup dark chocolate chips
Instructions
  1. Preheat oven to 350F
  2. In a bowl, cream the butter and both sugars
  3. Add the egg and whisk
  4. In another bowl, mix the flour, oats, baking soda and salt
  5. Add the flour mixture to the wet mixture and stir
  6. Fold the chips into the batter
  7. Scoop onto lined baking sheet and flatten slightly
  8. Bake for 12 minutes or until edges are slightly browned
  9. *optional to broil on low for a minute*
  10. Let cool and enjoy! 🙂
