Butterscotch Oatmeal Chocolate Chip Cookies
Ingredients

+ 2 tbsp cassava flour
can sub all purpose flour
1/3
cup
GF oats
1/2
tsp
baking soda
1/4
tsp
salt
1/2
cup
unsalted butter
softened
1/3
cup
organic cane sugar
1/4
cup
coconut sugar
can sub brown sugar
1
egg
1/3
cup
butterscotch chips
1/3
cup
dark chocolate chips
Instructions
Preheat oven to 350F
In a bowl, cream the butter and both sugars
Add the egg and whisk
In another bowl, mix the flour, oats, baking soda and salt
Add the flour mixture to the wet mixture and stir
Fold the chips into the batter
Scoop onto lined baking sheet and flatten slightly
Bake for 12 minutes or until edges are slightly browned
*optional to broil on low for a minute*
