Classic Peanut Butter Cookies

Ingredients
  • 1 1/4cup cassava flourcan sub regular all purpose flour
  • 1/2tsp baking soda
  • 1/2cup grass fed buttersoftened
  • 1/3cup organic cane sugar
  • 1/3cup coconut sugarcan sub brown sugar
  • 1 egg
  • 1tsp vanilla
  • 1cup runny organic peanut butter
Instructions
  1. Preheat oven to 350F
  2. In a bowl, microwave the butter for 30 sec to soften it
  3. Add the sugars and cream together. Add in the egg and vanilla and mix just until combined.
  4. Stir in the peanut butter and set aside
  5. In another bowl, mix together the flour and baking soda
  6. Add the flour mixture to the wet mixture and mix until fully combined
  7. Refrigerate for 30 min (dishes time)!
  8. Scoop and roll onto baking sheet lined with parchment paper
  9. Flatten with fork to make criss cross pattern
  10. Bake for 12 minutes and let cool
